Lundberg Risotto

Carbs give me energy but I've been trying to find healthier forms of carbohydrates, especially after watching Food, Inc.

I came across this while I was at Cold Storage the other day and decided to give it a whirl. It didn't turn out too badly! The saltiness of the risotto went well with my sweet left-over pulled pork and the alfalfa sprouts added a nice crunch to it. 

I should have added a bit more water to render an even creamier texture though.

I also tried Lundberg's Rice Cakes. Not for the faint-hearted. Try it only if you don't mind bland foods.
